Etrogim are available with and without the pitum - the protruberance on the top of the etrog. There is some confusion as to the kashrut of the etrogim that do not have a pitum.
The rule is as follows: if the pitum falls from the etrog naturally while on the tree, the etrog is kosher. if the pitum is knocked off after picking, the etrog is not kosher. Experts can tell the difference, and all of our pitum-less etrogim are certified kosher.
